So basically daisy chain the Thunderbolt displays by plugging 1 into the other. I am thinking about getting a new M1 Mac Mini to replace an older 2013 iMac. And second, the M1 only supports two total displays, and on laptops (as opposed to the Mac Mini), that includes the built-in display even when it's not used.
